I chose Hermes because he was the clever and quick messenger Greek god, and lightning is also very quick. Hermes also invented fire, and often when lightning strikes, fire is born. Finally, the god Apollo gave him a golden helmet to protect Hermes from bad weather (like lightning). This fits because Jolteon is yellowish/gold and at least in Fire Red, Jolteon comes with Volt Absorb which heals 25% HP when hit with an Electric-type move. The electric move being lightning (bad weather) he's protected from.
