Title: Baking!
Post by: Wrath of Zuruggu on September 03, 2014, 17:42
This is just about baking guys so if you want to talk about other food go make your own topic :[

Just because I've been inspired by Great British Bake Off...

So what's your favourite thing to bake/ the best thing you can bake? Cakes, pastries, breads, pies, etc.? I know there's a lot of us here who like to cook.

My favourite thing will always be my nana's fruit cake, full of big cherries and lots of desiccated coconut! It's quite an important one for me, too, because nana now lives with the worms and bacteria so she can't make it any more.

Bread, Cakes and Pizza Dough (well, the whole pizza, but only the dough is baking xD) are my main three, but it like baking cookies too ^^

I love doing massive 4+ Tier mocha cakes, decorated with flakes or whatever - it's really tasty  ^.^

(Also that took me embarrassingly long to work out what that last sentence meant - sorry to hear that =/)

I used to really enjoy baking cakes, coffee cakes especially, but now I can't eat them it's put something of a dampener on the whole thing and I've not made one in quite a while..
I've wanted to give apple nut bread a try for a while though so maybe I'll do that..  also gingerbread. Hmm.

The best thing I ever made was probably a bread and butter pudding in cooking class

 ALLTHOUGH

I want to make gingerbread men (or people) but mix some whiskey into them. I found the recipe somewhere and they looked really nice.

I could make a family of little alcoholic gingerbread people

Made a top notch bread and butter pudding one time when I had to use up 20p bread from the reduced section at Tesco's. Was pretty fantastic tbh.

Love baking cupcakes and brownies, even though I'm really messy it's so much fun ^^;

Me and my Mum do cakes for family Birthdays because we can - they were delicious (but not scouts) - so I guess I will share them

This one is a white chocolate sponge - The decoration is a T because it was Tom's Birthday
(http://i.imgur.com/nwqRYfG.jpg)

This one is a caramel and chocolate sponge - the decoration is the album cover for Origin Of Symmetry, my Mum did this one for me as a surprise :-)

This one is Tom's 18th Birthday chocolate volcano. There are three types of sponge and marzipan, the outside is melted chocolate and there are orange aero balls and Cadbury's things that make up the volcanic rocks. We used sparkler candles so it looked like it was erupting and there's red and yellow icing sugar dribbling down the side like lava. This was so much fun to make (and eat)

i loveeeee baking <3
I bake every so often, usually to relieve stress or if I feel like crap lol. Nothing better than battering some biscuits to death  and then eating the end result after!

The last thing I made were these oreo cheesecake bites:
(https://scontent-b-lhr.xx.fbcdn.net/hphotos-xfp1/v/t1.0-9/10568933_10201503022656288_2779190487957418497_n.jpg?oh=c96b03c89395dc0921872bfcb84ca0dc&oe=545B1C91)
took absolute ages but they were v nice

also made this banana sponge with toffee and cream in the middle:
(https://fbcdn-sphotos-c-a.akamaihd.net/hphotos-ak-xpf1/v/t1.0-9/10346106_10201260483032949_1738648154733647525_n.jpg?oh=e647270213ba45a819314237c3e8fd79&oe=546CD5E1&__gda__=1416964254_bde88d1987171c0360c1a98dd83815fc)

but yeah my favourite thing that other people make would be my mums homemade tablet or my grannys baking in general.

My most recent baking endeavour were some gluten free double chocolate brownies <3

I also bake cookies pretty darn well. My preferred flavour is marshmallow and M&M, but double chocolate fudge always goes down nicely.

Cakes... I tend to just make whatever. My specialty is probably honey cake, although I did bake a rather nice lime cake with mango sourz buttercream icing once...

And also fresh strawberry & white chocolate blondies, because I can.

Reading this topic makes me want to bake all the things - definitely making notes for things to try out!

I'm no great baker, what I make is normally tasty but looks a bit naff =P I make tasty mince pies though, I'm told, which is for the best since I make dozens every Christmas.. ^^;

I did produce this silly little fellow a few months ago, though, because everyone needs more cube-headed Dewgong cakes in their lives:

My housemate came home to find a scrawled sign on the fridge saying "Warning: Contains slightly deformed, very happy sea lion."

I'm not much of a baking kind of person myself, but of course I would love to do baking! Particularly cheesecake and such.

Mum did make Gingerbread Latté (accent might be unnecessary) Fudge recently, and it is pretty damn good. She also made some truffles too, and they are verrrrryyyyy nice.

I used to really enjoy baking cakes, coffee cakes especially, but now I can't eat them it's put something of a dampener on the whole thing and I've not made one in quite a while..

I used to love putting loads of cream on cakes but as I can't stomach it now it's an awful bummer... Especially as so many recipes call for some kind of high fat cream to make a filling.

Ho hum, I try to taylor recipes to how I can eat them now anyway :>

Guys, all these baked goods are making me so hungry v_v

I like making cookies and this awesome banana bread when I have the stuff and the time to.

Omg I have loads of black bananas in the freezer, please share your banana bread recipe :>

//runs into topic panting and taking a puff from blue inhaler// did......did someone make a weed joke yet

(this was going to be a post about my recent escapades in baking bread aka The Staff Of Life but it sounded dorky as all hell and also went on for about 5 paragraphs)
(however i will say im very curious about no knead bread as i just do not have the patience to develop the gluten to the point where it makes a decent windowpane test result and nice open crumb,
also i wish our oven had a pilot light - its the perfect place for proofin ur bread)

not bein a dick or anything but do you slash (http://www.breadsecrets.com/slashing.html) the loaf before it goes in at all???? it looks a little like you got a bit of a liftoff/bursting going on, but it could also be a bad angle of photo so if it is then disregard, like i honestly can't tell whether thats a burst or an ear

Nah, didn't slash it, but the bread has kinda split on the top? Makes it look more homemade, so I quite like it, but yeah, I think it's just because it filled the tin to the top so both sides lean to the side when they rise leaving the middle split slightly?

Buuut, it's definitely not an ear xD

Buuut, it's definitely not an ear xD

the split/blowout is because when it bakes, the oven spring (see the end of my post) causes the surface tension on the dough to go tight as all hell on the top as it bakes/expands, and if there's no way to relieve it (which is usually done by slashing it) the top of the bread just rips and blows out

its not a problem most of the time, ive had at least a third of my loaves do this cos im still getting the hang of slashing, but in some cases depending on when it splits it can release a load of the vapour inside the bread and the bread can end up sorta a bit stodgy and deflated, cos (longwinded explanation of leavening and yeast and CO2) and you need the vapour to stay inside the bread until it's cooled

like i hope you know im not pointing at it and going BAD LOAF cos any loaf is good (i personally wish society as a whole would return to Homemade Bread and cast chorleywood process bread (https://en.wikipedia.org/wiki/Chorleywood_bread_process) back into the hell where it belongs) but its more a "just a lil tip for some indeterminate time in the future" thing

(p.s. an ear is in reference to this (http://www.sourdoughlibrary.org/scoring-bread-ears/), its one of those Satisfying Baking Achievements, along with a good oven spring (http://www.thekitchn.com/word-of-mouth-oven-spring-47327) and a nice open crumb (http://www.artisanbakers.com/crumb.html). )

I made a fruit bread yesterday and slashed the top... then it did the explody thing from the bottom instead v_v It's like the bread was /trying/ to defy me.

I absolutely love baking!

I've watched a bit of the Bake-Off from time to time but only when I travel home as I don't have a TV.

My most recent bakes are coconut chocolate brownies, White chocolate and ginger cheesecake and Caramelized Pecan and Maple cake ~ Needless to say I am rather popular with my housemates!

Really would like to try making brownies soon.

Would any of you recommend any "off the record" baking tips? I'm thinking a little splash of Baileys? I'm not sure what that would accomplish though.

They're not going to be that kind of brownies... I just figured that they looked more fun than gingerbread people.
Title: Re: Baking!
Post by: Dragonpika on September 14, 2014, 13:52
^ Baileys in buttercream is amazing, I made far too much of it once and put a tupperware tub of it in our flat fridge - everyone kept going and eating little spoonfuls of it when they were in the kitchen, it was the most unhealthy and tasty few days until it ran out!
Title: Re: Baking!
Post by: Pam-the-Lamb on September 14, 2014, 16:15
Oooh I might try that when I'm feeling better! The recipe for buttercream doesn't look too crazy either  ^.^
Title: Re: Baking!
Post by: Dragonpika on September 14, 2014, 16:44
My buttercream recipe is literally soften butter slightly and add icing sugar until it tastes right, sometimes with a splash of flavouring or evaporated milk to make it less fluffy and more creamy - I think technically you're meant to use special things, but butter + icing sugar has always served me well!

Made some chocolate and banana brownies today.
They're, um..  interesting. Think perhaps they could have done with less banana, as that's all you can actually taste, and it's very stodgy. Ah well.

Trying to make healthy cakes that don't taste awful is hard gosh darn it.

We had a ostgrad party last wednesday. I was the only postgrad not currently studying, so because I tagged along anyway (read: the lecturers all invited me anyway) I felt it was necessary to bake a cake.

Normal vanilla sponge, with bright blue honey-buttercream icing and raspberry/strawberry topping.
