I don't like the whole thing with having to hit the sweet point with the clutch as you start off, since I think I'm way too cautious and I stalled the car a few times.

After a few lessons, you'll know exactly where the bite point is and as soon as you find it put the accelerator down to keep the revs up so the car doesn't stall. But don't boot it otherwise you'll get wheelspin. It's a balancing act that after a while you do without thinking.
