If you had an Evolution Line to use, what would it be and why?

The Eevee Line for me (preferably shiny) because on Pokemon Sword (the game I am Galar's Eevee Gym Leader on), I have a whole team of shiny Eevees (one shiny Eevee, and the Eeveelutions).
