Ah. Forms. Or Formes. Nobody ever quite sure whether that 'e' is necessary or not. Still, forms have become a major part of the Pokémon games in recent years, and HeartGold and SoulSilver are no exceptions. This page shows you how to change the forms of Pokémon which allow it.
Deoxys
Deoxys can have 4 different forms: Normal, Attack, Defense and Speed. While this used to be determined based upon the version Deoxys was in, in Generation IV this was changed so that Deoxys could be in any form on any version. This is determined via the use of Meteorites. Put your Deoxys in your party and travel to Route 3 and you will stumble upon 4 Meteorites. Interacting with them will change the form of your Deoxys:

Rotom
In Platinum, the special Secret Key was needed in order to change Rotom's forms, however this is no longer the case. Take a Rotom to Silph Co. in Saffron City and when it is at the front of your party it will take you to a special room in the elevator. There you will see the different appliances needed to switch Rotom's form.
Giratina and Shaymin
Giratina and Shaymin are both unique in that they both need items in order to change their form. Giratina changes form when holding the Griseous Orb. It is impossible to trade this item, and so you will need to get a Griseous Orb from a Wild Giratina obtained through the Arceus event.
Shaymin changed form when you use the Gracidea. This is the only form which a Pokémon cannot maintain at all times - Shaymin can only stay in it's new Sky Forme during the day (between 6am and 8pm to be exact) and it's form will reset when it is returned to the PC. If you download a special event Shaymin and take it to the woman in the Goldenrod Flower Shop, she will present you with a Gracidea.
