I've only seen Pikachu's SUmmer Vacation, Pikachu's Rescue Adventure and Pikachu and Pichu but Pikachu and Pichu is my fave so far. It's a shame they don't have one on Celebi: Voice of the Forest.

Pikachu's vacation had awesome music in it. it is the most memorable short for me:)
