Short for "Relationshipping" and is, more often than not, romantic. For example, AshxMisty (accepted by many to be called "Pokéshipping") is a pairing between Ash Ketchum and Misty. In fact, "pairing" is another term for "shipping" IIRC.

Oh, and there doesn't seem to be an official name for NolandxErika. Henceforth, it shall be known as LawnmowerShipping. (credit Halagago for the name. )
