I have a question. When I try to find out the Hidden power of the Pokémon on Sereb!i, it comes out with all these different types and powers. Is there a way to tell which one is the real one?

Talk to the guy in the place where you exchange your coins in Veilstone, he can tell you the type of it. Without exact IVs you won't be able to work out it's power.

Does HP matter that much outside of stuff looking for 101 HP subs (which is actually sorta nullified by the fact that Seismic Toss doesn't seem to be used often, although correct me if I'm wrong on that) because it's on an add/subtract basis whereas Defense/SDef work by ratios?  Obviously battle calcs are needed (which applies to def/sdef) but still..

Well yeah, if have anything that requires a turn of set up, slower than most things, or generally fragile then max HP is very important. For the first two, you usually need to take a hit to set up/kill stuff, so a decent HP stat helps there. For fragile stuff, HP is much more important than defenses, so even if you're not investing EVs into that stat, it's still good to have it as high as possible for a better chance of surviving random hits.

Does Speed matter much for Vaporeon?

Yeah, since it shares the same base speed as Scizor, you're going to find yourself taking a U-turn to the face before you can make a move.

All the Scizor sets on Smogon suggest at least 8 Speed EVs, so a flawless IV on Vaporeon will still see it taking a U-Turn before it attacks.

And Vaporeon usually has around 40 EVs spare after giving it HP and Defense, so you usually put 12 of those in speed to outpace 8 speed Scizor :P But speed creep is something that comes down to user preference, so it's up to you.

Whoa... what on earth? Boxed it though I dunno what it'd be good for.
Also, how important would outspeeding Scizor even be? What's Vaporeon doing to it? Hoping for a 3HKO?

Well being faster means you can get in a last Wish if needs be (please tell me you bred Wish on ><), finish off a low health Scizor with Surf (0 SAtk Surf on 248 HP Scizor - 39.4% - 46.4%). Being slower means you get 2hkd with hazards (41.5% - 48.9%)
